The 2015 vintage Grenache included 10% whole-clusters with 5% Syrah to add color and structure. Instead of crushing, during fermentation a combination of punch-downs and pigeage, also known as foot treading, were incorportated to manage extraction. While in the cellar, this wine was aged for 20 months in 100% French oak puncheons, of which 25% were new. Prevailing on the nose are dark berry notes accompanied by baking spices, vanilla and anise while the palate is filled with berry and cherry flavors with hints of currant and dark chocolate. One of the most versatile wines to pair with food, Grenache lends itself to be served with braised or smoked meat and stews, but try it with a classic charcuterie board or cassoulet.
